Not-cho Average Plate of Nachos

Pacific Beach Shore Club’s Big Josh Nachos are named for the Big Josh Foundation, and $1 from each sale goes to the foundation, which is focused on giving financial and counseling support to people that work within the service industries who’ve been diagnosed as terminally ill.

You can also recreate the oh-so-tasty plate of tortilla chips, piled high with all the best toppings, at home thanks to this Shore Club recipe:

Big Josh Nachos

Ingredients:
10 oz. fresh corn tortilla chips
8 oz. cheese sauce
4 oz. refried beans
2 oz. guacamole
2 oz. pico de gallo
2 oz. black olives
2 oz. sour cream
2 oz. jalapenos
1 oz. chopped cilantro
Choice of 6 oz. steak, chicken or brisket

Instructions:

  1. Add a layer of refried beans onto a pan or serving tray, using about 2 oz
  2. Then add a layer of fresh corn tortilla chips, about 5 oz
  3. Follow with a layer of cheese sauce (4 oz)
  4. Top with a second layer of refried beans (use the remaining 2 oz), followed by rest of the tortilla chips
  5. Use the remaining 4 oz of cheese sauce for the last layer
  6. Top layers with pico de gallo, diced jalapenos, black olives and guacamole.
  7. Now add your choice of meat
  8. To finish, drizzle with sour cream and sprinkle chopped cilantro. Enjoy!
