San Diego’s Sunny New Rooftop for Summer Brunching

Topside Terrace in The Hotel Republic has debuted a new weekend brunch menu, curated by Executive Chef JC Colón. This talented toque first stepped into the spotlight upon returning home to San Diego from New York City’s former Tempo (by Chef Michael Fiore) and Nelson Blue in the Financial District. His culinary street cred moved him through the kitchens of San Diego’s finest including Urban Kitchen Group, Blue Bridge Hospitality, and Malarkey’s former Searsucker Del Mar as Executive Chef before being tapped for Hotel Republic’s three unique culinary concepts.

Keeping in line with his everything-made-in house credo, Chef Colón utilizes his network of regional farmers and local purveyors to develop over a dozen new dishes including standouts such as: Jidori Chicken Chilaquiles with salsa verde, pico de gallo, cilantro avocado crema, queso and poached eggs; Chicharrones & Guacamole with Uni; Porchetta “medianoche” on challah with cotto, swiss, sweet pickle, sunny side egg, red onion and mustard; plus Charred Octopus Aguachile Verde with cucumber, torpedo onion and jalapeño.

Brunch-goers can wash those delectable dishes down with a selection of spring mimosas. Choose from lavender, cucumber honey, or rose-flavored mimosas for $11 each, or for those looking to celebrate the weekend, go bottomless for the party price of $18. (Insider tip: for people like me who don’t like their drinks too sweet, ask for your mimosa with only half of the sweetened flavor add-ins for a lovely, less sweet mimosa!) Traditional mimosas are also available, as are the usual suspects done up with a Topside twist, such as The Bloody Mary with house-made mix, a slice of bacon and a habanero salt rim; the Topside Marg with fresh lime juice and local chili peppers; or the Mexican Firing Squad with tequila, pomegranate syrup and fresh lime juice.

Start the weekend with an invigorating 60-minute yoga class held outdoors on the patio deck at Topside every Saturday morning at 8:30 a.m.Complimentary and open to the public, “yogi celeb” instructors such as @theyoganinja, @devonthedo, and @avajohanna lead attendees through a mindful Vinyasa flow to find a moment of peace amid the beautiful cityscape of downtown San Diego. After feeling super zen, ease back with a mimosa and brunch service at Topside.
