First Taste: Florent Debuts New Menu

With his new position as Executive Chef at Florent, Abe Botello just unveiled delicious dishes coming to this Gaslamp Quarter’s menu. The new dishes position Florent more as a food-forward destination. Chef Abe’s vision for the new menu was based on the history and decor of the venue. The spot used to serve as San Diego’s Old City Hall building, established in 1874. Through the decades, the building has been an integral part of San Diego governance and politics and is now a hallmark of San Diego dining and social life. The history, along with the whimsical decor, inspired Chef Abe to create bright and bold interpretations of classic favorites. Florent’s management team shared that their positioning of the new menu is based in value — providing high quality dishes in robust portions that wont have diners leave hungry.   And don’t forget about the cocktails! Esteemed bar master Tony has an innovative yet approachable cocktail menu that has won multiple awards. The Jail Bird is a personal favorite, made with milagro tequila, grand marnier, muddled cucumber and jalapeno, and lime.  One of Florent’s most esteemed dishes is their scallops – 4 pan seared u-10 scallops sit atop pea puree, potato gratin, and spinach in a lemon butter sauce. Fresh, flavorful, and tender scallops are perfectly presented.

 

 

 

To start, try Florent’s take on new food trend cauliflower. Their buffalo cauliflower is fried crispy and tossed with house baffalo sauce and blue cheese, topped with shaved celery and served with blue cheese dressing. Vegetarians rejoice, this sharable app will curb the crave for buffalo wings and even one-up them!

 

As delicious as it is beautifully presented, the Harvest Salad is a perfect fall salad. Kale is generously topped with butternut squash, dried cherries, pepitas, farro (an ancient grain), and apples, tossed in an apple cider vinaigrette. 

 

 

The Black Truffle Burger is reason enough to stop into Florent to check out the new menu! Not only is the burger topped with a truffle aioli, but black truffle is actually infused into the 8oz burger itself for a decadent dish! Served with swiss cheese and wild mushrooms, Florent brings the burger to a whole new level. Even the fries are remarkable good, perfectly crispy and flavorful.
