August 31st, Green Dragon Tavern partnered with Henebery Whiskey to present a unique dining experience with a first-time pairing of limited edition spirits with an award-winning menu.
Green Dragon Tavern & Museum is a major attraction now open in the Carlsbad, CA, area. The 22,000 sq. ft. space features a museum, restaurant, tavern, coffee house and meeting/event space. Green Dragon Tavern’s executive chef, Greg Krol, created one-of-a-kind food pairings with Henebery’s Celebrated Whiskey, a complex rye-based spirit meticulously crafted in a century old tradition.
Net proceeds from the 60 person dinner benefited the non-profit Green Dragon Tavern Historical Foundation of California, a free, educational facility within the Green Dragon Tavern & Museum that features authentic original documents to reconnect visitors with the life, times and still prevalent innovations and perspectives of those who shaped our great country.
Green Dragon Tavern & Museum, a private family-owned venue, proudly celebrated its opening to the public on February 12, 2014. The Green Dragon creates a welcoming atmosphere for celebrating, remembering and honoring early American history, our founding fathers and their many contributions to our past and modern day society. Offering complimentary admission, the Green Dragon Museum houses documents from the Colonial and Revolutionary War eras and provides an opportunity to further appreciate our country’s rich history.
Chef Greg Krol has created a menu for Green Dragon Tavern & Restaurant that reflects “old world” meets “new world” cuisine and features all locally farmed and sustainable ingredients.
For the Sips + Savors whiskey paired dinner, we enjoyed 5+ courses including:
*Grilled peach salad with great hill blue cheese, pork lardon, Riesling vinaigrette, baby arugula and watercress with the Celebrated Muse cocktail
*Seared Foi Gras on toasted Brioche with the Copper Dragon cocktail
*Striped skin on bass and red tear drop tomato, parsley basil pistu, Israeli couscous, Summer gold squash, lemon oil with the Saint Matthew cocktail
*Intermezzo of granata with balsamic caviar beads
*Braised pork shank with blackberry demi, cedar sweet potato plank, crispy brussels, pickled mustard seed, and perfect egg with the Dare Maxima Vitrue cocktail
*Plum apple crisp with spiced crumble with the Vista Point cocktail
The sensory dinner included torched cedar menus that described our journey through the meal, complimenting the aromas of Henebery’s heavy rye with sweet floral and citrus undertone.
