Breakfast sushi? It’s better than you think, and you can make it yourself!

One our favorite breakfast spots is Fig Tree Cafe. With two central locations (PB and Liberty Station), you have plenty of options to ensure your weekend egg cravings are satisfied. While the restaurants have been closed this Spring, we were missing our favorite dishes at Fig Tree, so asked them to share our very favorite dish recipe with us: Breakfast Sushi! Sounds odd, but we swear it is one of the best things you’ll put in your mouth!

Breakfast Sushi

Serving Size: 3 Rolls

INGREDIENTS
4 cups Jasmine rice
4 cups water
4 ea. whole eggs
1/2 cup scallions, diced
3 ea. bacon*
3 fl. oz. plum sauce

*option to use “Man Candy” bacon (see recipe below)

INSTRUCTIONS
-Add Jasmine rice to water and cook.
-Mix eggs and scramble in pan until soft (not cooked all the way).
-Add scallions and rice to eggs and mix thoroughly.
-Using a 4-inch aluminum ring, line the bottom inside of the ring with bacon.
-Fill the rest of the ring with the egg, scallion and rice mix.
-Repeat this step two times, making three separate rolls.
-Top each roll with 1 fluid ounce of plum sauce.

Man Candy Bacon
INGREDIENTS
1 lb. 10/12 applewood bacon
2 cups brown sugar
2 tbsp. paprika
Pinch of cayenne pepper

INSTRUCTIONS

  1. Pre heat oven at 350 degrees.
  2. Mix all of the ingredients together and place on aluminum tray.
  3. Place in oven for 10 to 15 min until bacon is cooked.

And ok, if you aren’t into making your own brunch, the good news is, Fig Tree opened up again this weekend for dine in service! And, of course, if you prefer, you can still get delivery or takeout!
